#31 Country Style Tonkotsu Ramen

Today’s Ramen is Tonkotsu Ramen from Fukuoka, Kyushu, Japan.

I like this simple packaging. It doesn’t have ramen pictures on it, but it looks good.

















It contains noodle and soup powder. The noodle is fried and curly.

















The recipe is on the back of the package. Boil the noodle for 3 minutes with 500ml of boiling water. Stir the noodle sometimes. When the noodle is ready, add the powder soup and stir it well. Put the noodle and soup into a bowl.

















This instant noodle is simple Tonkotsu ramen taste, not too light, not too rich, it's just right for me. I added an egg and chopped scallions. This is from Ukiha city of Fukuoka prefecture where is the three major noodle making of Kyushu area.

Today’s instant noodle is Tetsuya Ramen from Hokkaido.

This is the special soy sauce ramen that has been popular among Japanese people. Media and magazines show how popular this ramen is. “Ramen Tetsuya” is the landmark of Tonkotsu Soy Sauce. This is the instant noodle which you can enjoy the special soup at home. Within 3 years since the shop started the first shop in 1997, it has expanded to 3 restaurants. And now it has multiple restaurants. In Sapporo where ramen restaurants are competing each other, this restaurant made its name as being popular for Tonkotsu soup.





















The content is noodle and liquid soup. The pouch of the noodle says the name of the company, expiry date, and the phone number. I think the noodle is curly.



















Soon I started cooking. Need to cook the noodle and the soup separately. First, boil the noodle. Boil plenty of water and boil the noodle for 6 minutes. I made it for 5 mins because I like the noodle to be still hard. When it boils up, stir them without damaging the noodle. During that time, make some soup. Put the soup and 270cc of water into a pot and then stir them well. It makes much easier to take the content out if you put the pouch of the soup in the hot water in a bowl beforehand. Depends on how hard you want the noodle to be, boil it up and move some water to a bowl. Drain hot water and then put the noodle in the bowl. The Ramen is completed once you put some ingredients you like on top. Because I only had one gas stove, I put the pouch of the soup and 270cc of hot water in a bowl instead.



















As you can see, the soup is very thick. It’s not raw noodle, but firm and curly thick noodle matches very much with the soup. In the history of the instant noodles, this must be the best one! Because of the thick taste, the soup won’t be watery even when you add lots of ingredients. The taste is rather thick than oily! This is how Hokkaido Ramen taste like. Today’s instant noodle is Umaka-chan’s Kurume Tonkotsu taste, made with pork belly and bones.

Umaka-chan is one of the popular instant noodles in Japan. The brand has been loved by lots of people for a long time. These days, expensive instant noodles are very popular, but Umaka-chan is old-style and lovable instant noodle. The noodle is fried and curly. The soup is powdery. This time, I’ll make some changes. I want to eat Umaka Fuji Ramen, which is described on the website of Umaka-chan, with lots of bean sprout. The look of the complete ramen dish will be like Mt.Fuji. That seems a little tip. Now, let’s start cooking.



















Heat oil in a frying pan, and add 400g of bean sprout until they are ready to eat. Season them with some salt and pepper. I don’t have a frying pan, so I use a pot instead. Next, boil 550ml of water and then put noodles in it. Keep boiling it for 3 minutes. When the noodle is ready, remove the pot from heat and add powdery soup to it and blend them well. Put the noodles in a bowl and add the cooked bean sprout on top of that. In the end, put the boiled egg on top of them. The tip is to decorate bean sprout like Mt. Fuji and the boiled egg like the rising sun. When I cooked it, I couldn’t make the noodle look like the mountain in the picture maybe because I overcooked the bean sprout. A very small mountain was created in the middle of the bowl. Because the amount of the bean sprout was not much, the boiled egg didn’t look like the rising sun. Not impressed, but the taste was good.
























As the package of the ramen says thick Tonkotsu taste, the soup is actually thick. Lots of the bean sprout and the boiled egg bring out the taste of the soup. Although there are lots of vegetables in the bowl, the soup doesn’t become watery. This ramen is healthy thanks to lots of vegetables. If you want to try instant noodles which Japanese normally eat, this is the one.

#13 Instant ramen from Hakata.

This instant noodle is a different flavor to the other Hakata noodles mentioned previously( Hakata Chicken Ramen Washi Packaging ),this is a Tonkotsu flavor version of the same product. As I mentioned before, it is again a Hakata noodle, so it should not disappoint you. The package has a Fukuoka festival printed on it, the festival is called ‘Hakata dontaku’ and it is held every May, there are more than two million people that visit from both inside and outside of Japan and it is a traditional festival that has been held for over 50 years.


















There’s an instruction on how to make them at the back of the package. It recommends to cook the noodles and soup individually. Firstly, put the noodles in boiling water and boil them for about two minutes. Secondly, put the soup powder in a noodle bowl and pour in 270cc of hot water (This should be done while the noodles are boiled.). Lastly, just add the cooked noodles in the soup to complete.




















The package has noodles and liquid soup inside, the liquid soup contains fat, so it’s best to warm it up before using.




















See this, my toppings were an egg (cut in half), chashu (a few pieces of roasted pork), spring onions and reddened pickled ginger.
























It really was the Hakata ramen noodle in taste and of course I was so satisfied! You’ve got to try them if you love Tonkotsu flavor noodles. Here is a video of this product being made.

The ramen dish in the photo is looking delicious. Though one of the characters is slightly on the picture of the char siu.The noodles are special this product focuses on the noodles. The packet has a writing saying ‘it uses Fukuoka barley.’. Well, Fukuoka prefecture developed a new kind of barley for ramen in order to polish the ramen up even more recently. This barley is called ‘Rah barley’ and produced only by the farmers in Fukuoka prefecture. When they make noodles with the barley, the noodle has a light color, firmness and doesn’t get too soft so it is the straight and skinny as its feature. It’s worth eating these developed noodles made with specific flour that was only made for ramen noodle use.



















Inside is packed with noodles and liquid soup.


The soup contains pork extract.



















A guide for cooking written at the back is for cooking the specialty noodles and the soup and eating them. Boil enough water in a pot, add the noodles and boil for approximately three minutes. While boiling the noodles, prepare 270ml of hot water and mix the soup sachet in a bowl, drain the water once the noodles are cooked and add the noodles in the bowl.


















What they recommend for toppings is spring onions, char siu and boiled eggs it says, but I normally top up with reddened pickled ginger for tonkotsu ramen. That makes the taste milder.



















I added cabbage, green onion,an egg,and char siu. I should have added more char siu, so it will go more rich tastes.

It has the taste of flying fish broth and tonkotsu, pork bone broth. Yakushima is located in Kagoshima prefecture, Kyushu area, Japan and is a listed as a world heritage island. Yakushima is famous for flying fish broth products and is famous for their abundance. The green color of the package expresses their abundance in Yakushima and the ◎ mark printed in the middle is the age of the Yaku cedar tree that is aged over 1,000 years. Yakushima was listed as a world heritage island in 1993 and since then it has been impressing a lot of people both inside and outside of Japan.

























The package includes a liquid soup and a block of noodles. The noodle block is fried with a type of curled noodle.

















At the back of the package, there’s kind instruction on how to make them that instructs to boil up water in a pot, add the noodles and boil for three minutes just like normal instant noodles. More information about Yakushima can be found here.Yakushima Japan guide.com

























The recommended toppings as mentioned were spring onions, sprouts, seaweed, char siu pork pieces and sesame seeds, however I use seaweed, spring onions, white spring onions and thinly sliced pork for toppings. The noodles are very firm to chew and delicious. One type of flavor of this noodle is tonkotsu, it contains flying fish broth, so it has quite a bit of fishy taste and flavor, so it doesn’t suit anyone who doesn’t like fishy soup. The taste of the soup is relatively clear, so it should be enjoyable for someone who is ok with fishy soup. It may be described as a Japanese unique taste.




















I buy ramen noodles everywhere in Japan when I travel and have noticed that the instant noodles in Japan don’t often have a photo of noodles on the package. I wonder if that’s for stirring consumer’s imaginations..? Of course it’s best if you can buy what you like, but it’s a little difficult with just a little information to decide, isn’t it? Today’s ramen is the ramen kamen (rider) tasogare (dusk twilight) tonkotsu, which is a tonkotsu ramen from Fukuoka. The bicycle rider in the middle of the packet is probably the ramen rider. In Japan, power ranger type hero animations like ultraman and masked rider are extremely popular. This ramen rider must be from that point of view I guess. A different point of this product is the packet is not made of plastic but paper. There are some paper packet products in Japan, but I’ve never seen any in other countries yet. It is a fascinating packet, and a good taste is promised. This company is one of the most traditional companies that has 200 years of history. They used to be famous for hand-stretching somen noodles originally and only a few years ago they developed this product. They came to develop this product supposedly because of a ramen lover being in love with ramen.




















At the back of the packet, there’s an instruction on cooking and eating. It says to boil 500ml of water, add the noodles, boil them for about two minutes and finish in the usual way.



















The packet includes only noodles and soup, so no dried vegetables and meats. The noodles are skinny and straight. They are wrapped in a paper box to not break such sensitive noodles. It is said in the instruction that adding some char siu, spring onions and seasonings will make this dish more delicious.


















I’ve put some char siu, spring onions, egg, reddened pickled ginger on top of the noodles, which are the royal road of Tonkotsu ramen.


















The taste was a very firm and thick tonkotsu. The noodles have a smooth slippery texture, so that suits this ramen. They’re a little expensive for instant noodles, but you would understand once you try them. They’re great enough to be enjoyed even if served in a restaurant. I’ve finished both the noodles and soup completely.
